Picture this - You’ve just worked an eight or more hour day.  One kid has to be picked up from practice at 5:30, the other has a basketball game that starts not long after.  Then you think.... “Oh no!  What’s for supper and how am I going to find time to make it?”

Or maybe the scenario is that you only need dinner for one.  You sure would like something hot and homemade,  especially in the chilly winter months, but you just can’t justify making a whole roast for yourself...or a pan of enchiladas, or a meatloaf that feeds an entire family.

Whether your situation is one of the above, or you’re working full time while also going back to school...or maybe you just don’t like to cook - TJ Huntley is the answer you’ve been dreaming of.  As of Monday, Dec. 16, she is ready to do the cooking for you from her store, Huntley’s PitStop, located at 213 W. Broadway in Eagle Grove.  She’ll make eating homemade as easy as thaw, heat, and eat.

Opening her own take-and- heat homemade meals cooking business has been a dream of Huntley’s for years.  Now that she has her own storefront, not only is she providing a variety of from scratch single serving freezer meals (although some people say the servings are so generous they get two meals out of it), but she is also serving up hot, fresh, ready to eat breakfast that includes biscuits and gravy, breakfast sandwiches, and breakfast burritos.  Homemade breakfast pizza will be coming soon.  She opens at 7 a.m. to make sure she can catch all the busy people on their way to work.  

“But if the lights are on, come on in,” she said with a big smile.

Huntley’s PitStop also offers a special of the day that is freshly prepared each day and is served from 10:30 a.m. until gone that ranges from soup to salad to meat and potatoes...and that will change consistently.  She even plans on adding Kumla and Kringla to that menu in the near future.  If you find yourself eating there often, you might want to take advantage of the lunch punch card - buy 10 meals, number 11 is free.
